I am so proud of myself for stepping out on my first recipe from Vegetarian Times. I have been getting this magazine for a while but never tried the recipes. I've also given the magazines away. I think now I'll keep them for gems like this I found. Will make it again and again and again.
This is the recipe:
4 roma tomatores, diced (I used those little cherri tomatoes)
2 persian cucumbers or 1/2 English Cucumber (again, I don't who my cucumbers were)
1/2 yellow Bell Pepper
2/3 cup chopped Parsley
3 tbs. Chopped green onion
2 tsp. olive oil
2 tsp. lemon juice.
Chop them all up and enjoy. I also put feta cheese and Ciliegine mozzarell in there. Those little small mozzarella balls. Yummy .
