I did it with no problem. . No meat at all today. Breakfast - eggs and grits. Lunch - pita pocket of green peppers, onions, mushrooms and cheese. Then to top it off for dinner, I made a good eggplant parmesan. It came out great. Peelneggplant, dip in eggs, dip in whole wheat bread crumbs, fry. Spindle with parmesan chesse. Then pour on marinarra sauce. Bake about 10 minutes until bubbly. Then lay on mozzarella cheese. Bake until melted, enjoy with spaghetti
